PINCI is a restaurant that embodies the atmosphere of Southern Italian happiness: soft light filtering through the windows, highlighting the warm terracotta tones of the walls, handmade pasta, the preparation of which you can watch directly from the dining room, the aroma of freshly baked bread and fragrant herbs, and carefully selected Italian wines – all of this is like an invitation to a journey through the most picturesque corners of the sunny country. The name of the restaurant is inspired by pasta dishes that are traditional to Southern Italy. These long, twisted spaghetti are often made at home, and therefore they are beautiful in their imperfection. The new restaurant's kitchen is headed by renowned chef Oleg Kolisnichenko from Rostov-on-Don (La Fabbrica, #5 in the WHERETOEAT South 2023 ranking), who successfully graduated from the Parisian Institute Dunaсса Argenteuil and the IFSE culinary institute in Turin, and is known for the La Fabbrica by Novikov project (Rostov-on-Don). He also completed internships at Jean-Carlo Perbellini from the Michelin-starred Casa Perbellini (2, Verona, Italy), Javier Aranda, the Gaytan restaurant, and the La Cabra restaurant (1, Madrid, Spain), Francesco Gotti – the coach of the Italian national team at the Bocuse d'Or in his own restaurant Francesco Gotti (Bergamo, Italy), and Jorge Viego, the chef of the Quntonil restaurant (Mexico City, Mexico). In the menu, Oleg Kolisnichenko draws on traditional recipes and his own experiences gained during numerous travels around the world and internships. For example, a dry-aging chamber is installed directly in the restaurant, where nduja sausage will be prepared for two months according to the recipe of Mateo's grandfather from Calabria – with dried Calabrian red pepper, pork belly, and pork shoulder. No less important in the restaurant's kitchen is a wood-fired oven, where pizza is baked at 450°C on birch logs only. The recipe for this pizza was inspired by a trip to Tuscany, and it can be a real culinary discovery, especially compared to the well-known Roman and Neapolitan pizzas. In addition to pizza, lamb and goat are baked in the oven in the Ligurian style, which are available not only by pre-order but also à la carte. Living up to its name, the PINCI team makes all kinds of pasta by hand every morning in an open kitchen – it is never frozen and immediately goes into the cooking process. Another significant section of the menu is premium-quality seafood, including the freshest oysters, which are delivered directly from the ocean without being held in a tank, preserving all the rich aroma of this marine delicacy. The desserts also feature authentic specialties – the taste of gelato made at PINCI is no match for the dish that is recognized worldwide as a true symbol of Italy. And, of course, it is hard to imagine an Italian restaurant without its own bakery – all the bread at PINCI is baked in-house, offering excellent focaccia and ciabatta. Soon, a display case with gourmet products will also appear in the restaurant, where guests will be able to buy something to take home. The cocktail menu focuses on Italy. It features familiar flavors associated with the dolce vita, as well as new combinations – bright and memorable drinks that are designed to be enjoyed in the moment. Guests are offered a good selection of digestive liqueurs, as well as the Balsamico Crema Martini – a twist on the famous drink, made with freshly brewed espresso, grappa, and balsamic vinegar, a bright cocktail based on the Italian bitter "Campari" with sweet notes of nuts and cocoa, complemented by homemade Noce Highball lime soda and Costa Gimlet based on olive-infused gin, the taste of which is complemented by notes of green apple and the freshness of absinthe. They also make their own limoncello, and in the future, they plan to expand the range of vermouths and introduce guests to the culture of their consumption. The restaurant team also plans to create their own signature vermouth. The balanced wine list features an impressive collection of Italian wines, as well as more than 100 labels from the New and Old Worlds, which occupy a worthy place in the PINCI collection – there are excellent options for both true connoisseurs and those who are just beginning their journey into the world of wine. The price per glass starts at 430 rubles. The interior, with its accent details, is a creative solution by the Pergaev Bureau design studio. The light walls, arches, and ceiling symbolize the walls of a city where life is bustling, and guests at PINCI are immediately drawn into a vibrant whirlwind, where the elegant and flowing lines of the coffee bar and the wooden pergola evoke Italian dance movements, and the rich red color energizes. The areas around the tables by the window are also very comfortable and welcoming. All the furniture is also made of wood, with upholstery in a typically Italian color palette. In the near future, the ceiling in the back room will be draped with tent fabric, the lines of which will resemble "waves" and will point the way to the open kitchen. Guests enter the restaurant from the city street through symbolic "wooden gates," leading to a cozy Italian-style courtyard. PINCI creates emotions that you want to savor. And this is a place where it is especially noticeable that every moment of life can be filled with true happiness.
