About
Oleg Kolisnichenko is the best chef in Southern Russia (according to WHERETOEAT South 2024). He was born in Kharkiv, where he graduated from the School of Restaurant Business. He also successfully completed the prestigious Argenteuil Institute in Paris and the IFSE culinary institute in Turin. He completed internships with Jean-Carlo Perbellini from the Michelin-starred Casa Perbellini (2 stars, Verona, Italy), Javier Aranda, at the restaurants Gaytan and La Cabra (1 star, Madrid, Spain), Francesco Gotti – the coach of the Italian national team for the Bocuse d'Or competition, at his own restaurant Francesco Gotti (Bergamo, Italy), and Jorge Vallejo, the chef of the Quntonil restaurant (Mexico City, Mexico). Oleg is well-known for his work at La Fabbrica by Novikov (Rostov-on-Don), which ranked No. 5 in the WHERETOEAT South 2023 ranking. He dedicated the past 6 years of his career to this restaurant. All of this allowed him not only to learn the secrets of the most renowned professionals in the culinary world, but also to develop his own unique style. His dishes are characterized by their unconventional presentation and are created in a fusion of culinary traditions, with a focus on local ingredients and natural flavors. Since the opening, Oleg Kolisnichenko has been the head chef at PINCI, a new restaurant in Nizhny Novgorod with the philosophy of "felicità" (happiness), which opened its doors to guests at the end of December on Rozhdestvenskaya Street, 39. PINCI is a restaurant that embodies the atmosphere of Southern Italian happiness: soft light filtering through the windows, highlighting the warm tones of the terracotta walls, handmade pasta that guests can watch being made, the aroma of freshly baked bread and fragrant herbs, and carefully selected Italian wines – all of which create an invitation to a journey through the most picturesque corners of the sunny country. The name of the restaurant is inspired by pasta dishes that are traditional to Southern Italy. These long, twisted spaghetti are often made at home, and therefore are beautiful in their imperfection. In his menu, Oleg Kolisnichenko draws on traditional recipes and often finds inspiration in his own experiences gained during numerous travels around the world and internships.
