Leading the gastronomic proposal is Maicol, who expresses his vision through a seasonal and surprise tasting menu in constant evolution: the number and sequence of dishes remain unknown, leaving space for a free narrative constructed in the moment.The experience unfolds across several different rooms in a dynamic itinerary that may vary throughout the year: it often begins in the kitchen, before moving to the evocative historic cellar, surrounded by bottles from around the world, where each guest has their own private table, and concluding in the dining room, with possible further interludes beside the chef.The cuisine fuses technique and creativity to remarkable effect, as in the tagliolini with cardoncelli mushrooms, butter and aged Parmigiano, finished with white truffle and accompanied by a curious “fake crumb” fashioned from the same mushroom. The experience is orchestrated with precision by Emanuele and Valerio in the dining room, while the cellar – broad and carefully selected – helps make the experience even more immersive. The portions, well judged in size, allow guests to navigate the entire journey with ease, arriving at the close entirely satisfied.
