The beautiful grounds of Schloss Schauenstein are home to OZ, another of Andreas Caminada's restaurants. The name is derived from the Romansh word for "today", a nod to the contemporary cuisine served here, which is exclusively vegetarian. Seasonal produce arrives fresh from the estate's own permaculture garden or from long-standing partners, and preserves ensure variety on the plate during the winter months. You certainly won’t miss meat, given the diverse and harmoniously composed flavours showcased by chef Simeon Nikolov in his creative nine-course menu. The Chawanmushi variation is a highlight – based on a clear Jerusalem artichoke broth, it features a topping of crunchy roasted Jerusalem artichoke brunoise, a poached quail egg and finely grated Perigord truffle. From seats at the U-shaped counter, diners can see the chefs at work – and even strike up a conversation. A donation of two Swiss Francs, which goes to supporting young culinary talents, is included in the price of each set menu.
