About
The main idea of the restaurant is to make popular fish dishes, loved by Moscow residents, delicious and accessible. The trendy and minimalist interior, reminiscent of New York, features floor-to-ceiling windows and ethnic motifs.
Specializing in fish and seafood is a challenge for a restaurant located in a business center on the outskirts of the Garden Ring (Business Center "Oasis"), which primarily serves the same regular clientele for lunch. Fish & chips, several types of pasta, pizzas, and seafood risotto, a tuna salad, and a Thai soup with coconut milk – it's impossible to do without the classic Moscow selection of fish dishes. The chef's task is to execute them to the highest quality standards while keeping the prices affordable (there is no lunch menu or discount at "Musson"), and the restaurant is usually fully booked during weekday lunches.
Evenings and weekends, however, present both challenges and opportunities. Alexei Gurov not only participates in restaurant festivals, introducing guests to his unique cuisine, but also regularly hosts gastronomic dinners, both independently and with guest chefs. Seasonality, using local produce, and constantly updating the menu are key principles. One of the regular suppliers, "Rybnaya Lavka Kapitana Selyodkina" (Captain Herring's Fish Shop), has helped introduce seasonal specialties to the menu, such as Belomorsk navaga-voroshenko. After the previous "Taigastro" festival, dishes made with muksun (a type of whitefish) and a Siberian pike patty were permanently added to the menu. The restaurant's motto is "Seafood cuisine, seafood soul," but Siberian river fish has now become one of the favorite ingredients for both the chef and his guests.
