The first Arctic cuisine restaurant in St. Petersburg.
The restaurant's focus is on Arctic cuisine, featuring regional products and expertise from the Murmansk region. This includes Lovozerskaya reindeer meat, elk, seafood, and fish from the Barents Sea: Murmansk cod, halibut, salmon, hake, and kelp. Of course, there's also crab and scallops. The menu includes crab patties, perfectly cooked reindeer, a salad with cod liver prepared directly on a ship at sea, crab-filled pastries, and Teriberka soup. The broth for the latter is made for twelve hours using crab and shrimp shells baked in the oven, which gives it a unique aroma. The chefs use their own berry sauces. The reindeer is served with lingonberry sauce. And the carefully selected cod loin is served in clarified crab butter with seaweed chips. For desserts, they create unusual combinations. For example, the "Stone" dessert is white chocolate with white mushrooms, while "Hibiny" features Camembert cheese and lingonberries.
Svetlana Kozejko, the head chef, is the first chef in Russia specializing in Arctic cuisine (the Arctic cuisine menu was officially published as a commercial offering at the Tsarskaya Okhota restaurant in January 2019). Since 2002, she has worked for the Restaurant Syndicate holding company in Murmansk. She has been the brand chef for 6 projects, three of which – Tsarskaya Okhota, Gray Goose, and Tundra – feature Arctic cuisine. Svetlana's dishes have been presented on numerous occasions at receptions hosted by the Ministry of Foreign Affairs for foreign ambassadors and journalists, and they were also included in the anniversary edition of "Recipes of Hospitality" celebrating the 100th anniversary of the Main Directorate for Diplomatic Protocol under the Ministry of Foreign Affairs of Russia. Svetlana's recipe for salted cod, "Northern Lights," is among the top 100 best in the country, according to the federal project "Gastronomic Map of Russia." She has also been a guest chef on the TV shows "Live Healthy" (Channel One), "Food: Alive and Dead," and "Let's Eat" (NTV).
The bar menu features a collection of Scotch and Irish whiskeys, Onegin liqueurs, cognacs from historic French houses, liqueurs from Ireland, England, and Italy. The tea menu is inspired by the nature of the tundra. The teas are based on Northern wild plants, reindeer moss, lingonberry leaves, and cloudberry blossoms. The liqueurs are made in-house using cloudberries, lingonberries, and blueberries. Soon, they will be offering Murmansk beer, "Pilgrim."
The wine list at Murmansk is not extensive, focusing on local Russian producers, with additions from Spain, Georgia, and Italy.
The interior is designed in an eclectic style, combining elements of loft, modern, and vintage aesthetics. Antique mirrors and handcrafted wooden frames adorn the walls, with one frame featuring a panel made of reindeer moss. The restaurant has 29 seats. Due to its small size, the restaurant has a very intimate atmosphere and is suitable for private events. They host author's dinners, wine tastings, and acoustic guitar performances. The cozy atmosphere is perfect for romantic evenings with candles.
