Restaurant "Mad'yar". From the Black Forest to the Black Sea.
A modern take on the cultural traditions and cuisine of the countries along the Danube River and the Black Sea coast. Unique to the entire Krasnodar region and Southern Russia, generous and vibrant presentations of iconic dishes from the Danube region are reimagined by chef Arisha Zadunaiskaya. The interior design concept began with the Danube River. It evokes the idea of how many peoples are united by the waters of this river. It depicts free horses grazing on the banks, nomadic peoples wandering, bonfires burning, laughter, wine, and dancing. The restaurant's color scheme features shades of clay and river motifs, as well as dark elements that reflect the idea of a journey along the Danube—from the Black Forest to the Black Sea. Light columns with smooth, limestone-covered sides add a touch of grandeur. The lighting creates a beautiful play of light on the walls. The shadows resemble both ornaments and ripples on the water. A large oven in the center of the room serves as the focal point and heart of the restaurant. You can gather around it for a circle dance! Approaching the oven from different sides reveals different perspectives of the space. The restaurant has three rooms: a main, open room with panoramic stained-glass windows that open during warm weather. Opposite the windows, there is a large painting depicting the "Chardash" dance, where beautiful women twirl in the dance. This is a collaborative work by artist Olesya Lavrinenko and Anna Tolmasova. Another room is more intimate, warm, and features a large shelf made of old pine, with a panel resembling a river, mud, seaweed, and the green waters of a summer stream. The shelf in this room displays antique vessels, each over a century old, that invite you to admire and touch them. This room also houses a wine cellar, visible from the entrance. The room behind the oven is secluded. The tables are designed to be pushed together into one large table, with raised edges that create a level surface. This table is made of very old, almost petrified oak. There is also a painting with bottles casually sketched on a tapestry. This is the perfect place for family celebrations and gatherings of friends. Thus, all the elements are reflected in the restaurant: fire greets you, air is to your right, water is to your left, and earth is beneath your feet. And in the atmosphere is the ether, filled with grace and wisdom. The door to the kitchen has windows with stained-glass panels in the shape of musical notes, a tribute to music, which is present in every corner of the restaurant. Dance and music, joy and feasting, good conversation, a bright outlook, embraces, and hospitality—that is what "Mad'yar" is all about. Let's delve deeper into the features of the cuisine and list the most popular menu items: Turkish mini-manty dumplings, Austrian Tafelspitz beef, Hungarian goulash, duck à la Kalashwari, Shopska salad, and baked scallops, ribs, and premium beef steaks, grilled on apricot wood using the Grillvett grill. In the dry-aging refrigerator, traditional beef cuts are joined by duck, which is aged here for exactly seven days. Traditional flatbreads called "pyrlenki" are very popular with guests. They are baked in the wood-fired oven, which is a true decoration of the restaurant. Pyrlenki resemble pizza in appearance, but the dough is lighter, more delicate, and softer because it is made with a sourdough starter developed by Agustin Garcia Calve, a Madrid aristocrat and descendant of the founder of the no-yeast dough technique in Europe. The starter is unique and has been passed down for centuries, according to Agustin—from King Arthur himself. Arisha studied the secrets of this starter and then supplemented the dough recipe with yogurt from one of the best farmers in the Kuban region, creating a truly perfect product. An extensive wine list featuring local Russian and Hungarian Tokaji wines perfectly complements the gastronomic experience. Restaurant "Mad'yar" is our love letter to all guests who remember the very first restaurant in the "Madyar Collection," and to those who are visiting us for the first time. In a new location, in a new format, and in a new interpretation. We look forward to welcoming you every day from 12:00 PM to 12:00 AM (Sunday to Thursday) and from 12:00 PM to 1:00 AM (Friday and Saturday).
