Pasta Bar with Local Ingredients and Original Dishes

Pástorie is a small establishment where each visit becomes a short but memorable experience. The chef and co-founder of the project, Yevgeny Levchenko, makes the pasta dough by hand on-site, using durum wheat flour, a sourdough starter, and adding chicken eggs. The pasta is cut into fettuccine, cooked for just two minutes, and served in a dramatic way – directly in a cheese ball made from Grana Padano, transforming each order into a small culinary ritual. As with the pizza bar "Kubana Toscana," it was important to us that the flavors be based on local ingredients. We source the cheese balls and young cheeses from our long-standing partners, the "Syrnye Istorii" cheese factory. Igor Bezryadnov creates the meat delicacies, and we make all the sauces and dressings ourselves.
