About
A small pizza bar with approximately 30 seats, serving Neapolitan-style pizza made with the finest ingredients from Southern Russia and Italy. The dough is made with just 5 ingredients: organic whole wheat flour with a high protein content from the Stavropol region, water, Italian yeast, sea salt, and extra virgin olive oil. The last ingredient is not typical for classic Neapolitan dough; Italians usually prefer to add oil directly to the pizza before baking. The chef and co-founder of the project, Evgeny Levchenko, allows the dough to rise for 72 hours before baking the pizza for 90 seconds at a temperature of 450°C in a wood-fired oven, which the team affectionately calls their "red Ferrari" – a Valoriani oven. The menu also includes green salads, appetizers, and desserts. As a complimentary offering, they serve roasted almonds with rosemary and cumin. The beverage selection includes local and Italian wines, beer, cider, soft drinks, coffee, and tea from the Krasnodar region.
