MAD Asian BBQ: MAD – MY ASIAN DREAMS This Asian restaurant, led by Chef Roman Grachev (recognized by the Michelin Guide in 2022), features a custom grill and a meditative interior, located in the Petrograd district. It champions the authenticity of Asian flavors, utilizes open flame cooking, and reinterprets Eastern culture. The menu features one of the most extensive raw bars in St. Petersburg: sashimi is prepared with deep-sea Sicilian shrimp, bowls are served with fresh, premium bluefin tuna, and hand rolls are made with scallops, crab, or yellowtail. At MAD, tradition is highly valued, and the custom grill is responsible for ensuring authenticity in the menu. Kushiyaki skewers, made with chicken, fish, meat, and seafood, are cooked over an open flame. One of the signature dishes is Peking duck, prepared according to a traditional recipe that takes up to 5 days. The farm-raised duck is aged for 3 days, then marinated with fragrant spices and fermented products. It is served with vegetables, hoisin sauce, and thin, unleavened pancakes. Sommelier Karim Arthur has focused on sparkling wines from Champagne and crisp, refreshing white wines with a bright acidity in the wine list. All selections have been carefully chosen to complement Asian cuisine. Many of the wines are perfect for a special occasion, featuring premium options from Tuscany and Bordeaux, as well as a wide selection of Burgundy Chardonnays. Head bartender Anton Gusarov has created a unique cocktail menu featuring conceptual cocktails inspired by Japanese Daruma dolls, and a collection of Asian sake. The restaurant's interior is dark and features a designer aesthetic by Anna Druzhenina ("The Garden"). The design incorporates the style of an Asian box, with bamboo-black walls and red-gold accents. The furniture is made from monumental materials such as granite, wood, and cylindrical tiles, which were produced to a special order.
