Oleg Perfilyov, a graduate of the prestigious Le Cordon Bleu Paris and one of the leading chefs in St. Petersburg, heads the kitchen at Bergamot. In addition to Crevette Bistrot, his resume includes internships and work at the three-Michelin-starred restaurant of Pierre Gagnier, the legendary Les Airelles hotel in Courchevel, managing the kitchen of the official restaurant of the Mariinsky Theatre, The Repa, and collaborations with brands such as Cartier and Veuve Clicquot. Oleg Perfilyov's culinary style is a fusion of French techniques, which provided him with a solid foundation, and international experience, which gave him the freedom of self-expression. His style is a sophisticated blend of classicism and Asia, where the aromas and techniques of Thailand, Japan, Vietnam, and India are reinterpreted in a new way. In addition to the expressive combination of flavors, the chef also uses interesting and rare, high-quality ingredients in the Bergamot menu: Atlantic turbot, Norwegian lobster, pigeons, Maran chicken, and marbled pork are presented in unconventional ways, helping to highlight the unique character of the project – its elegance and diversity. Citrus fruits are a signature element, appearing in dishes in various forms: from thin slices to dried extracts and essential oils, adding unexpected aromatic nuances. Oleg personally selects suppliers, develops recipes, and oversees the presentation, where every detail must be impeccable. "I believe in the power of fresh ingredients, brought to the highest level of precision. Bergamot is a tool that reveals flavor and builds a dialogue between the West and the East," says the chef. The carefully curated wine collection includes iconic labels and small producers, featuring both prestigious producers from Burgundy and Bordeaux, as well as new "stars" of Champagne, and discoveries by sommeliers, reflecting a thoughtful approach to selection and pricing. A modern touch: in addition to the traditional wine list, a digital version is also available. The cocktails on the bar menu are a unique interpretation of classic recipes that have become symbols of luxury and sophistication, and a reference to historical and legendary drinks inspired by the best bars in the world. Dry, strong, and complex, signature cocktails are served tableside, showcasing the skill of the waiters and turning each moment into an unforgettable experience. The interior design of Bergamot, created by the talented designer Anastasia Khalchitskaya, conveys a special atmosphere of quiet luxury, while the canonical layout of the restaurant's rooms adds depth and a nearly academic harmony to the space. Among the vintage artifacts and art objects, you can find a French tapestry by Jean Pansu from the mid-20th century, Catellani & Smith candle holders, and a hand-blown Murano glass chandelier by Doria Leuchten. The restaurant's style is also reflected in the tableware: the porcelain is made to the owners' own design in Germany, the silverware is from the Italian company Broggi, and the vintage artifacts are from the Parisian company Christofle. The uniqueness and individuality of Bergamot are also emphasized by the graphic designs of chef Alan Passara and the works of St. Petersburg artist Ksenia Lundt, which create a special, memorable atmosphere in the restaurant.
