Moscow, 3rd Yamskogo Polya Street, 9 Website Concept by: Georgy and Veronika Vershinin "RestaurateurChef" about the project: This small, 30-seat oyster bar, located within the new residential complex "ART Residence," is the brainchild of young restaurateurs Georgy and Nika Vershinin, originally from Rostov-on-Don. It perfectly embodies the atmosphere of a trendy neighborhood bar somewhere in a European capital. However, it's not on the main tourist street, but rather on the outskirts of the city center. Situated near Leningradsky Prospekt, and within easy reach of the Belorussky Railway Station and the business cluster on Lesnaya Street, this area clearly has a bright future, with new residential complexes and hotels already under development, making the location strategically advantageous. The concept of the place is minimalist: an oyster bar with a small open kitchen, using lighting instead of decorations, and a 4-meter aquarium in the center of the room, from which the mollusks are retrieved before being served. The main offering is, of course, oysters, with 18 varieties on the menu, 7 of which are Japanese, while the others come from New Zealand, France, Korea, Morocco, and the Russian Far East. The price of an oyster starts at 150 rubles for a Casablanca and goes up to 470 rubles for a Gillardeau. During the week, from 12:00 to 17:00, instead of business lunches, there's a happy hour offering New Zealand oysters for just 135 rubles each! In addition to oysters, the aquarium also features guidak (also known as mirugai), priced at 650 rubles per 100g, and scallops (390 rubles per 100g). Depending on the availability of suppliers, the raw bar also occasionally features anadara (370 rubles per 100g) and spizula (350 rubles per 100g). The main menu includes dishes such as pike roe in three different marinades, tartares, Niçoise salad, bouillabaisse, baked scallops, grilled octopus, and mussels in a shrimp broth. The wine list is also concise, with around two dozen selections, but it includes both classic wines and biodynamic options (prices start at 370 rubles per glass for a traditional Muscadet). The average bill, excluding drinks, is 1500 rubles.
