About

Kumpan Terra offers a fascinating journey through the Republic of Bashkortostan. The creators of the project were inspired by the traditions and way of life of the peoples living in our region. A key element is the "yurt," the traditional dwelling of the Bashkir people. The yurt was divided into three zones: a women's area, a men's area, and a "uryan" (a space for guests). Traditionally, the kitchen is a woman's domain, a place of warmth, comfort, and, of course, delicious food. The main hall is the largest area, serving as a living room and, simultaneously, the men's area. The "uryan" is the place where important guests are received. The restaurant's layout reflects this division. Inside the restaurant, guests will find all the elements that make the yurt so special, from wooden details and felt lampshades to national patterns. The restaurant's design is based on four patterns representing our region: rivers, mountain ranges, beekeeping, and the traditions of the peoples living in the republic. The bar is designed to resemble the Aidel River with its winding banks. The columns in the hall symbolize tree trunks, adorned with "tamgas" – ancestral symbols. The theme of honey is continued with a wooden panel shaped like a honeycomb. When you enter the restroom, you find yourself in a stylized version of the Shulgan-Tash cave. The subdued lighting and mirrors, designed to resemble the Asly-Kul and Kandry-Kul lakes, create a unique atmosphere. During the creation of the project, the founder and creative inspiration, Mikhail Kumpan, developed his own "tamga." You can see it throughout the interior: on the cutlery holders and on the staff uniforms. The "tamga" is a combination of three symbols: a tree, a bird's claw/mountain, and horns. This correlates with the meanings of the words "kum" (friend) and "terra" (earth), representing "friendly earth." Of course, the menu deserves special attention. It is very diverse, and what is particularly noteworthy for restaurants of this type is the inclusion of regional specialties and the use of locally sourced produce. For example, the menu features "kystybyi" – national flatbreads with various fillings, "kazylik" in the "anipasti" selection, horse meat tartare, and much more. The excellent quality of Kumpan coffee is also worth mentioning, as the owner, Mikhail Kumpan, has his own coffee plantation in Costa Rica and his own roasting facility. And the pizza is something special… The airy crust and a wide variety of toppings made with the finest ingredients. In conclusion, Kumpan Terra is a collaboration between the long-standing traditions of the Kumpan chain and the local cuisine, presented in a new way. It is an establishment with history, meaning, and a unique culinary experience. It is suitable for both special occasions and as a restaurant for everyday dining. You can enjoy a lunch or a memorable dinner here.
