Chef Hiroki Arakawa, who has dedicated nearly 35 years to the art of Japanese cuisine, has opened his own restaurant, Kappo Hiroki Arakawa, in the "Modny Sezon" shopping arcade. The chef's culinary philosophy focuses on the pure flavors of the highest quality ingredients, and the authentic atmosphere of Kappo allows guests to experience the traditions and spirit of Japan. Kappo is a type of restaurant in Japan that serves a traditional multi-course menu called "Omakase," consisting of 8-9 dishes, including appetizers, fresh seafood, sushi, soup, a main course, and dessert. Kappo Hiroki Arakawa is the only restaurant in Moscow where you can experience the traditional Omakase sushi and Kaiseki courses as they are enjoyed in Japan. The chef will prepare dishes for you using the freshest, seasonal ingredients, including Japanese Wagyu beef, slow-cooked beef cheek (gyu hoho nikuyawarakan), edamame nigiri sushi, clam soup, and blanched greens (ohitase). This means that some dishes on the menu will change daily, and each Omakase experience will be unique and personalized for each guest. The main menu of the restaurant offers both rare culinary creations and modern classics of Japanese cuisine. Salmon belly, blood cockles, Wagyu beef, traditional sushi, and rolls are all prepared with the chef's focus on balance and harmony of flavors, ensuring that each ingredient truly shines. Even the rice is prepared differently each day, taking into account the weather and humidity. The chef personally inspects every piece of fish that enters the kitchen, paying meticulous attention to detail. In his pursuit of the highest quality, the chef does not compromise. Chef Arakawa began his culinary journey at the age of 16, training for nearly 10 years under renowned chefs in his hometown of Osaka. The process of mastering culinary skills in Japan is quite rigorous. It is believed that each apprentice must spend at least a year perfecting each aspect of the cuisine, whether it's preparing sushi or filleting fish. After completing his training, Hiroki Arakawa worked as a chef in Osaka (Kappou Hibana, Hotel Towada), at the Kuriya restaurant in Singapore and Kuala Lumpur, and in Moscow at the "Sakura" restaurant. Now, all of his skills and deep respect for tradition are embodied in the philosophy and approach of Kappo Hiroki Arakawa. The authenticity and continuity of tradition are reflected not only in the cuisine but also in the ambiance of the restaurant. The minimalist interior was designed by the Japanese company Kawauchi Keisuke Design Office (K2DO) in a classic style with subtle floral accents. A prominent feature is the traditional Omakase table for 10 people, designed to allow the chef to interact with and cook for each guest. K2DO is a boutique design firm from Osaka specializing in creating premium interiors for bars and restaurants throughout Japan. They have completed over 30 projects, and Kappo Hiroki Arakawa is their first project in Russia. At Kappo Hiroki Arakawa, gastronomy meets Eastern tranquility and the ability to appreciate the essence of flavor and atmosphere. Everything here is designed to encourage conversation, self-reflection, and enjoyment of the present moment. The wine list is curated by Vlada Lesnichenko. The restaurant has 64 seats: 32 in the main dining room and 32 in the atrium of the shopping arcade.
