Grappa is the embodiment of Italian hedonism in the heart of the city, in all its aspects of gastronomy, freedom of taste, choice and relaxation, appealing to each of the five senses. The restaurant offers a wide range of Italian dishes, prepared with impeccable adherence to tradition, as well as author's variations that reveal its endless possibilities. The cuisine of Grappa is a gastronomic map of Italy, which brings together the flavors from the Alps to Sicily. The bar offers an immersion into the world of Italian drinks. From aperitifs in large portions during aperitivo time to digestifs, as well as pure liqueurs, author's infusions and cocktails based on Grappa. Author's cocktails, strong drinks and a wine list with items that are not found in the city. Grappa is a portal to authentic Italy. We invite our guests to immerse themselves in Italian gastronomic alchemy, where classic traditions are integrated into modern interpretations. Philosophy: Italian hedonism 24/7 We want to surprise you and reveal all the facets of such a diverse Italy. During the day, we are a relaxed and atmospheric Portofino, where instead of the usual business lunch, we offer our guests the opportunity to enjoy a siesta. In the evening, Portofino transforms into Rimini, a city in Italy that never sleeps, with its abundance of bars and clubs. Depending on the day of the week and time of day, Grappa offers guests the opportunity to experience different scenarios of a perfect Italian day. We embody the philosophy of "Il bel far niente" - "THE ABILITY TO ENJOY EVERY MOMENT WITHOUT HASTE." We are not just a restobar, but a portal to the gastronomic world of Italy, where each guest experiences their perfect day - from a leisurely lunch to a vibrant evening aperitivo and a lively pre-party. The philosophy of Grappa is joy of life, taste, emotions and sensuality. We are inspired by the traditions of Bacchus, the god of wine and celebrations, bringing the ancient ritual of gratitude into the modern world. Every Friday and Saturday, our space transforms into a celebration of taste, music and freedom. In the glass are author's cocktails based on grappa, wines and liqueurs from Italy, and in the heart of the evening is the energy of life. During the week: A relaxed lunch break - Siesta smoothly transitions into a lively Aperitivo time. Siesta: You can relax during lunch, enjoying Italian lunches and sipping non-alcoholic cocktails. Every weekday from 12:00 to 17:00, we offer a special menu from the chef and bartender, which we update every week. From 18:00 to 22:00, we welcome guests for Aperitivo Time. We have developed an aperitivo menu based on the gastronomic traditions of the Italian evening, which immerses our guests in the atmosphere. It features a wide selection of snacks and classic aperitif alcoholic spritzes, as well as non-alcoholic cocktails. On weekends: A leisurely and carefree brunch transforms into a festive aperitivo that lasts until the evening, and then into an energetic pre-party with the atmosphere of an Italian bar. Brunch will be its embodiment, a special menu with an emphasis on the bar menu and light snacks. Pre-party: We were inspired by Roman traditions, where the harvest (which is harvested 3-4 times a year in Italy) was marked by a grand celebration - a bacchanalia - in honor of Bacchus, the god of winemaking and feasts. It was believed that the more joyfully and generously this day was celebrated, the better the harvest would be. We have brought this spirit into the modern world. Every Friday and Saturday from 22:00 to 01:00, our establishment transforms into a space for a new ritual. Instead of harps, there are sets of light house music from a DJ, and in the role of the gifts of Bacchus are our signature grappa, as well as 4 infusions based on it, author's cocktails, the best Italian wines and liqueurs brought from Italy. We have created a place where you can truly celebrate the end of the week, charging yourself with energy for new achievements. Seasonal transformations: Italian culture festivals Each season, Grappa transforms, becoming a center of Italian festivals, and the decor, menu and atmosphere change, but one thing remains the same - the atmosphere of a generous Italian celebration of life. To maintain the festive atmosphere, four times a year, Grappa is completely transformed, becoming the epicenter of Italian culture. We change: Musical accompaniment; A special menu from the chef and bartenders; The atmosphere, through decorations, the appearance of the staff, completely immersing guests in the theme of the holiday (for example, the Venetian Carnival, the Palio di Siena, the harvest in Tuscany). Mission: To convey to the public the traditions and culture of Italian hedonism through gastronomy, design and philosophy. Goal: To introduce guests to the culture of Italian gastronomy through experience (aperitifs, digestifs, sets, author's drinks, traditional dough, etc.), not just dishes and alcohol. To create a multifaceted environment where every element (interior, music, lighting, aromas) works to fully immerse guests in the atmosphere of Italy. To position the brand as an expert in Italian culture, holding at least 4 themed events per year (gourmet dinners, master classes, tastings) to increase the cultural literacy of our guests. Gastronomic concept: A journey through the regions of Italy We are a synthesis of a bar specializing in Italian aperitifs and digestifs, as well as a restaurant based on a narrow range of Italian cuisine from different regions of Italy. Our cuisine is a gastronomic map of Italy. We collect the best dishes and products from all corners of the country and complement them with author's variations. A vivid example is lasagna: we take the classic recipe from Emilia-Romagna as a basis and present it in our interpretation. Arancini is another example of a southern dish, presented in 3 flavor variations. In the east of Italy, they love cannoli and "Bolognese" pasta, to the recipe of which we added a touch of brightness and creativity, and we bake focaccia according to the Ligurian recipe, as it is made in its western homeland. And to show the contrast between the generous, sunny, agricultural region and the refined, restrained, aristocratic north, we offer ossobuco - a symbol of Lombardy, prepared in the traditional way. The main gastronomic accent is Pasta della chef. A unique dish that we prepare and serve in a Parmesan Reggiano cheese head, as is customary in Northern Italy. Al dente ribbon pasta made by hand in a cheese-grappa sauce with a tartare of premium tenderloin and a generous shaving of Parmesan. This is not just food, it is a real theatrical performance. The heart of the kitchen is authentic pizza. The basis of our pizza is a dough made according to a secret recipe of our brand chef, Stoyan Nikolov, brought from Naples. The recipe for the dough is a family secret that has been passed down from father to son for over 3 generations. We do not use yeast to make our pizza, we cultivate it with a live starter, which is a complex daily process of synthesizing old and new materials. By following all the traditions of slow fermentation and baking at a high temperature, we get the perfect airy "cornicione" edges. We have collected orthodox recipes for making pizza from different regions of Italy, such as Margherita, which is prepared in Naples or Capri, or Capricciosa, which is prepared in Rome. Bar concept: Grappa as a symbol of transformation The uniqueness of the bar lies in immersing the guest in the culture of Italian drinking, expressed in both aperitifs and digestifs. Grappa, as a fundamental product of our establishment, is the basis of our bar. Grappa is our main character. We tell guests the story of this drink: from its "rustic peasant" past to its status as the "queen of digestifs." Innovative approach. A wide range of spritzes for every day as an aperitif, offering guests to start the evening with the best. And as a compliment - our signature infusions based on grappa, as a unique author's product. We have taken Italian digestifs to a new level, making them a hallmark of the establishment. Only at Grappa in Perm can you try liqueurs brought directly from Italy, which is our pride, such as: Amaro, Amaretto, Cynar, Fernet. The cocktail menu consists of 13 classic Italian cocktails such as: Vento, Belladonna, Garibaldi (etc.) and 7 author's cocktails based on grappa, amaro and other liqueurs. This redefines the perception of the drink and reveals it from a new, elegant side. Grappa is a symbol of transformation. Once a strong digestif for peasants, today it is becoming a hero of exquisite cocktails and a new symbol of the evening. We are rediscovering it - light, fragrant, with the character of Italy. Atmosphere and design We have filled the space with the breath of art. Every detail of the interior is a unique work of talented designers, artists, sculptors, professional welders, painters and decorators. Inspired by Italian architecture, we wanted to integrate the classic style of the Renaissance into a modern and comfortable space, immersing guests in the atmosphere of theism with elements of Italian Renaissance. The designers faced the task of subtly incorporating elements of ancient heritage. The entire team studied the works of Ancient Greece and Rome, drawing inspiration from their ideas. The philosophy of humanism lies at the heart of the Renaissance, which placed the dignity and value of the individual above all else, reducing the role of religious and secular dogmas. These ideas embody our concept - hedonism of taste in all its manifestations. Another characteristic feature of the Renaissance era is the interest in human individuality. Artists began to depict people as they are: with emotions, with distinctive features, in real life. Similarly, we strive to pay attention to each individual guest's needs - without conditions or prejudices. Our concept is based on the idea of synthesis: uniting what was previously separate. Similarly, the design reflects the fusion of modern comfort and ancient monumentality. Grappa is a complete ecosystem of the Italian lifestyle, where gastronomy, art and philosophy merge into one.
