"Dacha" – A Suburban Paradise. "Dacha" is a picturesque suburban restaurant designed to surprise guests with its "Siberian Fusion" cuisine, using farm-fresh ingredients from local producers and our own small farm. We created this project for people who value unique products and a personalized approach, are willing to pay more for it, appreciate high-quality service and experiences, want to spend time with their families, work hard, and are mindful of their diet. Our Philosophy "Dacha" is a project built on love for people, food, and life. We are creating a new "Siberian Fusion" culinary direction to establish a distinct identity for Tyumen cuisine, which previously didn't exist. We combine traditional ingredients like juicy carrots and farmer's "Brie" cheese from Tyumen cheesemakers, seasonal tomatoes, and octopus on a single plate. We are not afraid to experiment, but we treat every ingredient with respect. Our head chef, Ksenia Vakhrusheva, has brought numerous recipes from her travels in Italy and is confidently adapting them using local ingredients. We are committed to mindful eating, and we want to introduce our guests to new flavors and evoke childhood memories through our dishes and atmosphere. Location The restaurant is located in the village of Dudareva, among private homes ("the local Rublevka"), away from the city noise, but practically within the city limits, while still maintaining a "suburban" atmosphere. The restaurant boasts a beautiful natural landscape, perfect for leisurely walks and enjoying the fresh air while children play in the playground. It's an ideal spot for photoshoots and even outdoor movie picnics. It's an oasis of natural beauty after the concrete jungle. Cuisine Our menu is based on products from local farmers: cheesemakers, dairies, and meat farms. Vegetables, fruits, and berries are grown by our farmer friends and also on our own mini-farm. The menu changes seasonally and is adapted to the products available at that time. We also offer dishes not listed on the menu (e.g., if we catch a wild boar, we smoke it and invite everyone for fresh meat). In the winter, we work with preserved and frozen goods made during the summer, and we actively share information about what we have prepared. The menu includes a section detailing the quantity of our reserves (e.g., 30 jars of pickles, 60 kg of frozen berries, 4 kg of dried mushrooms). Before each menu update, we traditionally host a gastronomic dinner with the head chef, featuring presentations of new dishes. We also regularly host Chef's Table dinners, including outdoor options. Our signature product is smoked dishes. We smoke everything: for the menu, for sale, and on order. This includes meat, fish, cheese, and even honey. We host outdoor barbecue parties year-round by the grill. Bar Our bar features homemade sparkling fruit drinks, blackcurrant "fanta," Russian wines, and craft beer from local breweries – the bar menu reflects the philosophy of our establishment. Atmosphere "Dacha" is all about childhood. When creating this project, we were inspired by childhood memories – the flavors of dishes prepared by our mothers and grandmothers, and, of course, the camaraderie with our neighbors. "Dacha" aims to become a community hub for residents of the surrounding area. It's a place where neighbors who might not see each other for months due to busy schedules can reconnect. "Dacha" has two halls. "Veranda" is a bright, sun-filled room with a pastry shop offering signature desserts, homemade pies, and baked goods. Upstairs is the "Attic" room, where you can relax, play board games, or watch a movie. And our main room, the "Fireplace" room, is more elegant and cozy. The interior of this room was designed by Moscow-based designers, Luisa Kuchinskaya and Ksenia Oreshkina. The interior uses natural and eco-friendly materials.
