"Chum" is a one-of-a-kind restaurant specializing in Northern cuisine, a unique establishment not only for Tyumen but for all of Russia, and a true landmark of the city. The restaurant has been operating since June 15, 2007. During its opening, a real Khanty shaman was present – and to this day, one corner of the establishment is considered magical: it is said that if you make a wish in this place, it will definitely come true.

The entire menu is based on local ingredients, and most of the dishes are unique. For example, there are sausages made from bear meat, baked rabbit tongues in cream, game cooked on marble slabs, or pickled cloudberries, the recipe of which has been kept secret since the restaurant's opening. Another must-try is "stroganina" – thinly sliced raw fish – made from muksun, nelma, and sturgeon. The restaurant serves it on a block of ice, and for an extra special experience, Chef Natalia Trapeznikova offers a master class on how to slice stroganina. Venison with hot cherries and a jam made from crowberries are also local specialties. As is Sosvinskaya herring, which is considered a "royal" fish, as it is only found in the Sosva River and is caught only once a year.

You can enjoy all of this under the canopy of a real Khanty "chum" (a traditional tent), which is installed in the restaurant. The chum is built according to all the rules, decorated with furs and drawings. However, reservations for seating inside the chum are always required in advance.

"Chum" is the only restaurant in Tyumen that is invited to participate in culinary tours, showcasing Northern cuisine in other cities of Russia.

The restaurant has received numerous awards and accolades: * It holds the Quality Certificate-2015 from the international travel website TripAdvisor and occupies the honorable first place among all restaurants in Tyumen on the website. * It is included in the list of "Best Restaurants Outside the Two Capitals" according to the international travel magazine Conde Nast Traveller. * Television programs and films have been made about the restaurant (one of the most recent shoots was for the "Good Morning" program on Channel One in March 2015). * In May 2015, "Chum" successfully passed the inspection by the television program "Revisorro" and Lena Letaua in Tyumen. * In August 2015, the magazine VOGUE wrote about "Chum" as part of a review of new Russian cuisine. * In November 2020, "Chum" entered the TOP-50 restaurants in the Ural region according to the prestigious WHERETOEAT award. * In February 2021, "Chum" entered the TOP-100 restaurants in Russia according to the prestigious WHERETOEAT award. * In March 2021, the magazine National Geographic wrote about "Chum" in a review of the Tyumen region.
