About

Authentic recipes, collected from different regions of the country, combined with modern gastronomic trends, but with an even stronger emphasis on Turkey – its atmosphere, mood, aromas, and flavors. The experimentation will continue.

The Turkish restaurant, a collaboration between Arkady Novikov and chef Jihan Deniz, is opening a second location at 21/10 Komsomolsky Prospekt, with 155 seats. The gastronomic concept will remain the same: authentic recipes from across the country, combined with modern culinary trends, but with an even greater focus on Turkey – its atmosphere, mood, aromas, and flavors. The experimentation with dry-aged meat will also continue, with dozens of steak varieties that the restaurant is rightly famous for.

Before coming to Moscow, Chef Jihan Deniz was the brand chef of the first steakhouse concept in Turkey, the Günaydın Steakhouse chain, which was founded in 1965. His style was formed from a young age: maximizing the pure flavor of ingredients using local herbs and spices, carefully selected meats and vegetables, and impressive, almost theatrical presentations. The chef often comes out to greet guests and showcase a captivating culinary show, in the best traditions of Turkish hospitality.

The Cihan menu features a wide variety of steaks, from classic to alternative cuts, including Wet Aged steaks from the restaurant's own aging room. You'll also find traditional Turkish köfte (minced meat patties), delicious grilled dishes, meze with airy flatbreads straight from the tandoor oven, kebabs, and signature burgers with generous portions of cheese, vegetables, and hefty half-kilogram patties. The selection of meat is the chef's sole responsibility, and he doesn't delegate it to anyone. Even those who are not particularly fond of meat dishes will undoubtedly become devoted fans at Cihan. The beverage menu also reflects the authenticity, ranging from Turkish coffee to traditional Turkish lemonades.

The design of the new Cihan restaurant also reflects the core aesthetic: a minimalist eclecticism with plenty of space, large paintings, mirrors, suspended chandeliers, leather furniture, and accent industrial details in a factory style. During the summer season, a veranda with 80 seats is open.
