A revival and reinterpretation of Armenian cuisine, blending traditional and modern flavors with a distinctly Armenian character.
The project aims to preserve the authenticity and genuine taste of Armenian dishes, while also making them more accessible and understandable to consumers. The restaurant team is led by professionals who are genuinely passionate about Armenian cuisine and culture: Head Chef Artur Shahnazaryan, one of the leading figures in the "modern Armenian cuisine" movement in Russia, and winner of the "Young Knives" show on the "Friday" television channel; and Anastas Meloyan, a young and ambitious chef who has previously managed the kitchen of the first oyster bar in Russia, Umi Oysters, and has completed a comprehensive professional course at the Novikov School. The restaurant's cuisine focuses on a new interpretation of traditional Armenian recipes, emphasizing the unique flavors of local ingredients. Dishes like chicken heart "tjkzhik," meat "lamadjo" with vegetable "atchan," beef tartare "tolma" with raspberries and "basturma" (cured beef), offer a classic experience with a modern, authorial twist. The desserts, such as "lavash-ganache" and chocolate "ghata" with a "matzun" cream, exemplify a perfect understanding of the evolution of modern gastronomy and a respectful approach to traditional Armenian products. And the true taste of summer in Armenia is embodied in the Armenian "okroshka" with cucumber "fres," and the green soup with sorrel and spinach. Guests will find a carefully curated collection of top-quality white and red wines to complement the dishes.
