The original painted sign on the façade recalls with quiet pride the century-long history of the establishment. Born from the restoration of an old trattoria set apart from the village centre, immersed among chestnut trees and outcroppings of tufa, the restaurant remains faithful to the Piedmontese tradition, presenting a cuisine that is forthright and firmly rooted in the territory. The menu focuses on simple yet carefully considered dishes, among them the old-fashioned Russian salad, prepared according to the custom that calls for the use of giardiniera, responsible for its pleasingly characteristic ‘slightly acidic’ note. In the warmer months, the enchanting terrace affords moments of genuine relaxation, while the early twentieth-century underground cellar, open to visitors, adds charm and depth to the experience. In the colder months, a modern fireplace warms the dining room, helping to create a welcoming and intimate atmosphere perfectly suited to savouring the cooking of another age, reinterpreted with measured restraint.
