At the start of the refined Corso Roma, the city’s elegant promenade dotted with gourmet shops, this restaurant welcomes guests on the first floor of a thirteenth-century palazzo, which also houses the Cantina Regionale del Roero. Here, chef Davide Palluda continues, year after year, to impress with a cuisine that speaks for itself: dishes of exceptional caliber, at times truly memorable, revealing a confident hand and rare sensitivity. The menu looks to Piedmontese roots while embracing modern, personal interpretations. Among these, one dish stands out for its unexpected delicacy, despite featuring game: fallow deer with grapes, peated whisky, and fermented cacao. Special mention goes to the dessert chapter as well, with indulgent sweets and a generous sequence of petits fours to close the experience alongside coffee.
