The name is derived from "Bistecca alla Fiorentina," which translates to "grilled beef steak" in Italian. This dish is a staple of the Tuscany region, and it embodies the restaurant's concept: the fusion of meat and Italian culture. The menu features a special selection of meat dishes, as well as grilled items made with local ingredients and homemade pasta. The emphasis is on presenting familiar ingredients in unexpected combinations. The bar menu also has its own unique concept, inspired by the musical term "groove." This term refers to the feeling of involuntary movement and connection to the underlying rhythm of a melody. The bar's mission is to provide guests with a culinary "groove," so the team pays special attention to the aesthetics and flavors of the drinks. Bist offers both signature cocktails and classic options. The interior design is dominated by Italian motifs, reflecting the country's elegance. The restaurant's dining room is adorned with custom-made frescoes and stained glass windows created using the "Tiffany" technique. In addition, Bist is building its own collection of contemporary art, so the interior will also feature works by young artists from St. Petersburg. The restaurant has 120 seats, two rooms suitable for private events, and a large, inviting bar.
