"Beluga" is a restaurant serving modern Russian cuisine, located on the second floor of the five-star "National" hotel on Mokhovaya Street. Opened in 2017, it features 80 seats spread across two halls decorated in a Russian style: the bar counter is designed as a crystal caviar container by designer Anastasia Panibratova, and the halls are adorned with Bohemian crystal chandeliers and panels created by the Recycle art group depicting Russian beauties wearing kokoshnik headdresses. The restaurant holds a Michelin star and is listed in La Liste and the Great List restaurant guide.
Since 2025, Chef Roman Chistov has been leading the kitchen. He represents the modern Russian culinary school and previously worked at the Ikra gastro-theater in Ples and Sochi. His signature style combines traditional cooking techniques with influences from ancient Russian cuisine and seasonal, local ingredients. The menu features dishes that emphasize seasonality, including roasted radish with low-fat sour cream, a Brussels sprout "vinaigrette" with pickled gooseberries, scallops with buckwheat and corn puree, Kamchatka crab with acidic pearl barley and pickled lingonberries, a carrot cake with black chanterelle mushrooms and a sauce made from Karelian cloudberries.
A special feature of the restaurant is its caviar bar, offering 15 varieties of black caviar – one of the largest selections in Russia. The menu also includes a wine list, a vodka bar, and a tasting set that combines Russian classics with modern global culinary trends.
