About

Aibat Khallyar is a modern interpretation of the traditional Bashkir dish, kystybay. The menu features over 16 varieties of kystybay, ranging from classic versions (with mashed potatoes or barley) to those with more contemporary fillings.

The Aibat Khallyar project combines the cultural heritage of Bashkir traditional cuisine with modern realities. It's ethno-modernism in every detail. It's challenging to introduce Bashkir culture to modern youth, but if it's closely intertwined with new and relevant trends, it's achievable. That's how our project was born. The foundation for our signature dishes is the classic kystybay, but with modern fillings such as grilled chicken thighs, salmon, various cheeses, patties made from 100% farm-raised beef, fresh vegetables, and our signature sauces. This dish has taken on a whole new, vibrant look! The interior design incorporates elements of Bashkir architecture and ornamentation, combined with modern and vibrant touches like pixels, glitches, and neon.
