A restaurant specializing in local cuisine, featuring dishes made with regional ingredients, cooked over an open fire using 19th-century recipes – a joint project by the acclaimed team of the ILYINGROUP restaurant group: chef Alexander Nikolaenko and head sommelier Kirill Sulima.
In this new project, Nizhny Novgorod's local products and culinary traditions serve as the foundation for the chef's innovative creations, with the flavors and aromas of the dishes deeply connected to the region's unique culture.
The spacious and bright interior features an artfully designed bar and an open kitchen, with a grill taking center stage. Open fire is the cornerstone of Nizhny Novgorod cuisine and a key principle of modern comfort food.
The contrasting mosaic floors, the intricately carved frame of a large wall mirror, and the archaic column in the center are striking design elements that emphasize the restaurant's connection to the gastronomy of the late 19th century.
Several years ago, chef Alexander Nikolaenko discovered a collection of culinary recipes in the archives of the local library, published in Nizhny Novgorod in 1898. This collection served as the inspiration for the entire project! Using the recipes from this book as a starting point, and creatively adapting them, Alexander Nikolaenko prepares dishes using local Nizhny Novgorod ingredients. The menu features a variety of pickled dishes, pies with various fillings, oven-baked soups (such as fish "skoblyanka" with sturgeon, and "serye shchi" with buckwheat), dishes made with wild pike perch, as well as beef and lamb from local farmers.
In the left side of the hall, a massive wine cabinet houses dozens of vintages carefully selected for the wine list by head sommelier Kirill Sulima (recipient of the "Best in the Industry. Sommelier of the Year" award in 2022, and twice the best sommelier in the region according to the WhereToEat Center). The wine list features a selection of rare wines from France, and will eventually include approximately 350 labels from all corners of the world.
We are confident that this project will become a landmark not only for the ILYINGROUP team, but also for the city and the region as a whole.
