Maxim Khomich was born on October 4, 1997, in Moscow. He has dedicated ten years to the culinary arts. Currently, he works as the head chef at the restaurant-bar "Ice and Fire," where he brings his ideas and concepts to life, creating unique dishes. Maxim sees himself not just as a head chef, but as a mentor and teacher to his team. He believes that a true leader is always surrounded by people who are ready to share his views and aspirations. He finds inspiration in the creative process, immersing himself in the development of new dishes, exploring new regional products, and training his team. For example, during one season, the team discovered okra, which was offered by local farmers. It turned out to be an excellent ingredient for culinary pairings with other ingredients. His love for the mountains truly ignited his passion for cooking. When he was almost 18 years old, Maxim attempted to climb Mount Elbrus. In the group with Maxim was a young man who worked in the hot kitchen of the Bracali restaurant, which had received a Michelin star. Bartolomeo (the young man's name) enthusiastically and passionately talked about his work, about how the team selects ingredients, creates new flavors, and provides emotions to the guests. At that moment, the future head chef realized that he wanted to talk about his own projects with the same enthusiasm. Peaks are often conquered, even if not on the first attempt, and dreams come true. So, Maxim's dream came true – in 2024, he took the helm of a new project, "Ice and Fire" Co-Co Team. Maxim's core principles are professionalism, respect, and honesty. These values are important not only to him but also to the entire Co-Co Team, of which he is a part. Maxim pays special attention to local products, considering them an important component in raising the level of gastronomy in the country. Maxim prefers to cook appetizers such as octopus mortadella, donuts with eel and bonito flakes, seared beef tenderloin, and other unusual combinations that are conveniently eaten by hand. In fact, the restaurant-bar has an entire section of the menu dedicated to this type of food. Maxim Khomich is a modern head chef who strives for continuous development and perfection, and who maintains high standards of quality in his work.
