Hayyam was named "Person of the Year" by the business magazine "Delovoy Kvartal" in both 2018 and 2019.
From a young age, he developed a strong work ethic and a meticulous approach. He entered the culinary world at the age of 12. His journey began at a cafe on the banks of the Yenisei River, where he helped with cleaning. Occasionally, he would substitute for the cook, and that's where he first honed his culinary skills – grilling meat. Interestingly, one of the regular customers noticed him and invited him to work at his restaurant, "Boomerang." Of course, Hayyam only knew how to grill meat at the time, but he had a burning desire to prove to himself that he could achieve great things in life. His first dish was created almost by accident, as he recalls. It was a sauce that was so pungent it made people's eyes water. Surprisingly, this sauce made a strong impression on everyone in the kitchen. They asked him to recreate it, but he didn't even know the names of the ingredients he had used. They watched him carefully, studying every second, and piecing it together. This was a place where he was believed in, given the opportunity to create and grow. Time passed, and his dreams and goals grew with him. He progressed from being a prep cook to a line cook, sous chef, and eventually, head chef. It was time to learn new things, to develop his own style, and that's when the consulting company "When Food Is..." was created, and new projects began. While working in this field, Hayyam was driven by a deep-seated dream: to have his own restaurant with his own unique cuisine and a profound philosophy. It took exactly six years from the initial idea to the realization of that dream. In the spring of 2019, the restaurant "FRESCO" opened in a historic building in the heart of the city, on Mir Street. This intimate restaurant, with its unique atmosphere, welcomed hundreds of guests from all over the vast Russian land every day. Looking back, Hayyam recalls with a smile how he used to go to the market every morning to buy fresh vegetables and fruits, meat, and farm eggs. He always strived for uniqueness in his dishes, for unforgettable flavors and combinations. Guests still remember how he would share his life online: mornings at the market, afternoons in the kitchen, and evenings at the airport, picking up fresh oysters. He says it was a great time, challenging and sometimes difficult, but it all led to the opening of a renovated "FRESCO" in the spring of 2022, also in the heart of the city, on Perensona Street. It has a capacity of 170 seats, is spacious, with a wide range of functions, and the same deep philosophy, with its own farm, underground parking, and four different rooms: the main dining room, a tasting room, a bar, and a wine cellar. Hayyam has even more plans for the future, and he is confident that he can continue to surprise and inspire the world. The tasting room in the restaurant was built with the intention of hosting renowned chefs, organizing gastronomic dinners, and fostering a culinary culture in Krasnoyarsk. It's worth noting that Hayyam is very enthusiastic about hosting dinners in his restaurant, and he also travels as a guest chef to other cities, giving gala dinners, sharing his experience and knowledge.
