Alexey Gavrilin is a chef with 20 years of experience, a student of Valentino Bontempi, Carlo Greco, and Giuseppe Davi – masters of Italian and Mediterranean cuisine. Alexey has been instrumental in shaping the project for several years. He has worked at the flagship "Klevo" restaurant on Petrovka and at the renowned Usachevsky Market.
The chef's team constantly experiments with the menu to highlight the unique qualities of the seafood. We love fish, caviar, oysters, crab, and sea urchins for their delicate, mineral flavor. The chef enhances these flavors with expressive sauces and various cooking methods: grilling, wood-fired oven, searing on hot pans, baking in salt, or raw preparations. The salads and side dishes are carefully selected to complement the main courses and allow guests to easily create a harmonious culinary experience.
