About
Alexander Yermakov is a master of simple cuisine, understanding that "simple" doesn't mean "easy." He cultivates sourdough starters for bread, smokes ketchup to enhance its aroma, ages meat to develop notes of cheese and nuts, and knows how to transform ordinary cuts of meat into silky-smooth filet mignon, as well as how to assemble the perfect sandwich. Every operation in his kitchen has meaning and involves a wealth of details, all honed through experience.
Alexander trained at the ICIF culinary institute and completed internships at Michelin-starred restaurants in Italy and France, including Albergo Ca Vittoria (* MICHELIN), Le Montrachet (* MICHELIN), and Arnolfo (** MICHELIN).
His previous work experience includes positions at Mandy's Caffe, Wontoneria, Mandy's Apothecary Irish Pub, and Winil Wine Bar & Restaurant.
Since 2023, Alexander has been the brand chef for Fitz Gastro Project, a restaurant group that develops affordable restaurants and pubs (including Bistro De Torino, Sean O'Neill pub, The Michael Collins, and The Dubliner). He is also an instructor in the professional culinary program at Novikov Space, including teaching his own signature course.
He was born in Kolomna, Moscow Oblast. He graduated from the ICIF culinary institute in Italy, earning an international chef's diploma. His total culinary experience is 17 years. His hobbies include motorcycles, Muay Thai, skiing, hockey, and his beloved French Bulldog.
