Under the term ‘ether’, derived from the Greek word for 'sky' or ‘firmament’, this restaurant gives physical form to the dream of the Tofé brothers, Sergio and Mario, who share the load, the former as chef and the latter as maitre d' and sommelier. The unassuming premises, just a few minutes' walk from Plaza de Legazpi, is intimate and minimalist, decorated with paintings by different artists. They favour a contemporary cuisine that is not devoid of personality, with interesting Latin American influences (especially from Mexico and Colombia) that speak to their experiences with chefs from the region. You'll find a unique tasting menu that changes five times a year: Talo (twice, 1st and 2nd in spring), Karpo (summer, focused on vegetables), Ouros (October, mountain flavours) and Thalate (seafood). Interesting fact: The well thought-out background music... varies depending on the menu and the stages of the meal!
