This long-serving ramen shop is loved by Japanese people for its “Three Great Ramens”: soy-sauce, salt and miso. First-time visitors are recommended to order the soy-sauce ramen, but once you learn that the Hokkaido-born chef studied in Sapporo, you might be tempted to go for the miso ramen. The soy-sauce ramen is served in a double soup of meat-based stock and seafood-based stock. “Ura-Shoyu”, the ‘hidden soy-sauce ramen’ not listed on the menu, uses meat-based stock only. If you’re having trouble deciding, start with the ‘official’ menu.
