Gemma is a charming spot from the husband-and-wife team of Chef Stephen Rogers and Allison Yoder. The couple met while working at Napa Valley's Press and returned to Rogers's home state to open this intimate spot in Dallas that highlights contemporary American cooking with a seasonal focus.The evening begins with a simple sounding but sinfully delicious warm raisin scone. Fried Castelvetrano olives mixed with fragrant Texas pecans are a delight, but it's cooking like the roasted heirloom carrots or the Idaho trout almondine that make a meal here memorable. Meyer lemon tart with notes of lavender and kisses of toasted meringue is a perfect send off.
