Cyril Attrazic presides over this family-run hotel and restaurant founded by his grandmother in the heart of Aubrac, a high-altitude plateau that could almost be mistaken for the Mongolian steppes. Shaped by rural tradition and a harsh climate, the restaurant takes hospitality seriously, albeit in a modern vein. In the kitchen, the chef conjures up a distinctive culinary world that elevates the terroir and fermented ingredients in turn, in surprising combinations born of his imagination and connection to the region. He showcases the renowned Aubrac beef, with its wealth of floral notes, which he serves "in its ecosystem". It is hard to imagine a better way to taste and experience Lozère.
