A Hsing has been serving Tainan-style milkfish congee since 1965, and queues still form early every morning. Expect to find fish meat, fish skin and some baby oysters in their flavoursome congee – a topping of fried garlic pieces adds extra aroma. Consider ordering the milkfish belly with braised ground pork sauce for its sweet, soybean flavour. Unlike at most simple shops in Tainan, air-conditioned seating is available inside.
