"YAGA" is a modern Russian restaurant that emphasizes the continuity of Russian culture, generosity, and delicious, accessible food. The project's author and head chef, Vladimir Bektemirov, has reimagined familiar Russian dishes (the ones our mothers and grandmothers lovingly prepared) and transformed them into unique signature dishes. The restaurant's specialty is meat, which we prepare in various ways: marinating, roasting, grilling, and braising. Our secret is a reliable recipe: take a simple dish and add a touch of magic. For example, we serve traditional buckwheat with braised beef brisket and porcini mushrooms, add several types of fish and forest mushrooms to the classic fish soup (ukha), and prepare Olivier salad not with the usual "doctor's" sausage, but with beef tongue. The "YAGA" menu is suitable for both hearty lunches and intimate dinners, so we also offer more refined dishes (lazy dumplings with veal cheeks and truffle sauce; beef tartare with smoked paprika and potato chips; "chak roll" steak with apple-celery cream and a creamy sauce; stuffed cabbage rolls with shrimp, a sweet pepper sauce, and a Parmesan mousse). The cocktail menu at "YAGA" features drinks with unusual ingredients such as pine cones, jasmine flowers, elderflower, cilantro, and chamomile. We mix them with the same skill as the fairytale Baba Yaga when creating potions and elixirs. The interior design combines modernity with Russian ethnic motifs. Clean lines, accents of natural wood and stone, ethnic elements, and patterns create a vibrant and slightly rough atmosphere. The restaurant's interior is very intimate, with soft lighting and curtains, creating the feeling that guests are in a hut or a small house. But it's a very stylish one! Everything, from the furniture to the ceiling, is handmade according to individual designer sketches. The chandelier is made of natural agave fibers, the ceiling is made of reed stems, the sink is made of black marble, a rare type of natural river stone, and the walls are decorated with charred planks and twigs. The pots on the shelves and on the summer terrace are made of black and red clay by artisans from Rostov-on-Don and the Krasnodar region. Blurring the line between reality and fairytale, the design incorporates elements such as a "guide stone," a small tower, a tree with chains, a mortar, a kettle releasing steam, and decorative brooms in vases on the tables. The subdued atmosphere of the interior is enlivened by bright accents: painted tableware, candlesticks, and cutlery holders. All the details are carefully collected from different corners of the South.
