Villa Madelina

About

Villa Madelina – a garden bistro with the soul of Colombia and a heart full of warmth.

Villa Madelina is a space where sunlight streams into every corner, and the aroma of spices, silk, and fresh herbs transports you to a world where history, cuisine, and art are interwoven. The idea for the restaurant was not born in an office, but on a journey – in Latin America, where restaurateur Andrei Aleksandrov (The Buddy) traveled. Months of travel, meetings with local people, stories gathered piece by piece – this is how the legend of the merchant Marco and the girl named Madelina was born, who became the inspiration and soul of this place. Madelina is not a fictional character, but a nearly forgotten heroine whose contribution to cuisine and art turned out to be surprisingly modern. From a young age, she cooked with her grandmother on the merchant's villa, where cultures and flavors mingled. Chefs from different countries, who accompanied Marco's partners, inspired her to experiment with bold gastronomic creations. This is how unique signature dishes were born, where classic recipes came to life in a new interpretation – with spices, sauces, and aromas from all corners of the world. However, the most important thing is that Madelina had a big and kind heart. At a time when famine reigned in the village, she secretly shared food with children from poor families, despite the risk of being fired. This genuine compassion and desire to share became a true guiding principle for Andrei Aleksandrov. He named the restaurant Villa Madelina in her honor – to preserve the memory of a girl who might have remained in the shadows, but whose story touched him deeply.

About the restaurant today. Today, Villa Madelina is the result of months of hard work. The construction was carried out from scratch, the renovation took more than five months, and the equipment and materials were delivered from Europe and Latin America – despite logistical difficulties, sanctions, and constant delays. We are creating a restaurant in a difficult time, but we are doing it consciously and with love. We have been through a lot with The Buddy, which opened in 2016, and we continue to move forward – for our guests, for our team, and for the idea we believe in.

Our menu features signature dishes inspired by the gastronomic traditions of the countries with which the merchant Marco traded. And each cocktail is a living story, reflecting the rhythms of Latin America and the Mediterranean, embodied in notes of herbs, fruits, and spices.

Villa Madelina: a space where every detail breathes craftsmanship and the spirit of tradition.

Cuisine The foundation of the cuisine is the rejection of frying and oils with a low smoke point. Only pure oils are used – ghee, coconut, and avocado. Preference is given to gentle cooking methods: fermentation, sourdough, slow cooking, and baking. The restaurant has a low-temperature oven, similar to a traditional clay oven. The pastries are a reinterpretation of Latin American and Spanish classics, enriched with fermented ingredients. Many products undergo a long fermentation process to reveal their flavor.

Cocktails Each cocktail is a reflection of the regions of South America and the Mediterranean. They embody the character, rhythm, and spirit of the cultures, collected in carefully selected ingredients.

Wine List The wine list of Villa Madelina is the result of three years of work and tasting experience. Despite the challenges in the wine industry, the team of sommeliers studied more than 5000 samples to create a unique selection of millesime wines from the Old and New Worlds.
