A restaurant with a gastronomic concept centered around tuna that has been aged (similar to steaks) in a dry-aging chamber.
The core of the concept is a new product for the Russian market: dry-aged tuna. This technology, borrowed from the world of steaks, involves placing the meat in a special chamber for several weeks, where it changes its structure and flavor. Tuna, in its qualities, is similar to meat, and is even called "marine beef," and also acquires a new, refined flavor after aging.
The main menu is designed with a concise selection of 35-40 dishes. These include tuna prepared in various styles and with different combinations, as well as meat dishes and vegetarian options. For a first visit, the restaurant recommends the "Introduction to Tuna" tasting menu, which consists of 7 courses. This menu will showcase the concept of the project, present the star ingredient in different preparations, and introduce you to the exceptional flavor of dry-aged tuna. One of the most interesting dishes on the menu is the Tomahawk tuna steak. The steak is served on the bone, similar to a meat Tomahawk. The uniqueness of this dish lies in the fact that from a fresh tuna carcass, weighing 35-40 kg, after being processed and dry-aged in the chamber, only about 10 steaks can be produced. Therefore, this dish is only offered upon prior reservation.
