Chef Andrei Gerasimov and his team create culinary magic. The foundation of the dishes is high-quality seafood and game. The menu features fish from the Yenisei River, such as grayling, muksun, Siberian trout, as well as fish from Lake Baikal, the famous omul. The meat dishes include reindeer and elk from the North. The chefs strive to use ingredients from the Northern forests: various berries (sea buckthorn, lingonberries, cloudberries), mushrooms (porcini, chanterelles, milk mushrooms), and unusual ingredients like dried fish (jagela), pine needles, young shoots, and ferns. One of the restaurant's core principles is to select seasonal and local products at their peak ripeness. This enhances the flavor of the dishes even further.
