The restaurant's philosophy is based on the concepts of slow food and zero waste. This means that the menu is regularly updated, strictly following the changing seasons, and the dishes are prepared using locally sourced ingredients.

The restaurant "Soloh," located at the Soloh SPA Village 4* country spa hotel, is built on the principles of slow food and zero waste. This means we regularly update our menu, adhering strictly to the seasons, using organic products produced in close proximity to the restaurant, as well as wild plants, and supporting local culinary traditions and dining culture. The main concept of the restaurant is foraging, hunting, fermentation, and working exclusively with local products and suppliers, using a handcrafted approach (our own bread, pasta, smoked meats, butter, cheese, and even flour). We tell our guests about the gastronomic traditions of the past, about ancient methods of cooking, which have been forgotten and are now being revived. The menu features many fermented dishes, especially during the winter months, when the selection of ingredients is limited, if the goal is to use only local and seasonal products. The dishes created by Chef Ivan Markov are, on the one hand, of a high restaurant standard, complex to prepare, and, on the other hand, very understandable and simple. This is because the goal is to show our guests that cuisine can be exciting, have a deep meaning, and have a history. At the same time, the restaurant team doesn't hide behind the scenes. We want our guests to know who is creating the food for them and to understand how much effort, both emotional and physical, is put into creating each dish. To further realize this goal, a gastronomic theater called "Soloh" is planned to be launched soon.
