The Seversky fish farm restaurant is a unique establishment, built on the site of a historic fish farm that has been restored as a tribute to history and a respect for Kuban traditions. Today, amidst lakes, lavender fields, and vineyards, a new culinary experience is being created, where nature, cuisine, and culture come together as one.

The restaurant's uniqueness lies in the personality of its creator. The owner of the fish farm is a descendant of Kuban Cossacks, who has become not only the head chef but also the interior designer. She collects and carefully preserves the ancient recipes of her family, transforming them into the foundation of a modern, авторская (author's) cuisine. It is her respect for traditional local gastronomy and her love for her homeland that have breathed life back into this forgotten enterprise, making it the first biodynamic farm in Russia.

The restaurant's menu is based on fresh fish from its own ponds and regional farm products: vegetables, cheeses, herbs, and wines. Traditional Kuban recipes are brought to life in a new interpretation – light broths, fish baked in a wood-fired oven with herbs, fermented side dishes, and delicate lavender accents. Each dish tells a story that connects the past and the present.
