Olga Panchenko, a descendant of Kuban Cossacks and the owner of a fish farm, has become the inspiration behind the local cuisine and the brand chef of the project. Her mission is to collect and revive ancient recipes, working with historians and local residents to transform forgotten heritage into modern gastronomy. At the heart of her philosophy is fish. Not just soup or cutlets, but a product with a multifaceted nature that amazed our ancestors. This is how dishes are created that break stereotypes: borscht made with fish broth and fried carp, porridge with a mousse of mixed fish and "snow" made from dried fish, lazy dumplings with smoked carp. This cuisine resonates with global trends: respect for the past and local products is becoming the foundation for the future. Simple Kuban fish is transformed into a symbol of culture, and each guest discovers it anew – along with the history and spirit of the region.
