The restaurant showcases the best of modern Russian cuisine. From Siberia and the Northwest to the Far East, the center, and the south, a gastronomic route has been carefully curated, reflected in the restaurant's vibrant menu. It features dishes like Vladimir-style green soup alongside Black Sea horse mackerel ceviche, a porridge made with Altai maral meat paired with a roll of Ladoga whitefish, and venison from the taiga served with honeysuckle.

The bar and wine list also feature regional selections, including indigenous wines from Dagestan and the Don, Kuban, and Crimea, as well as distilled spirits and terroir-specific tea blends. The interior of "Regions" is subtly elegant, with details that tell a story: the tabletops are adorned with representations of the Amur and Vetluga rivers, while the chef's table is separated by panels featuring the ornamentation of Vepsian window frames.
