Restaurant – A Culinary Journey Through Modern Armenia

Just a few meters from the Kremlin, at 19 Starovagankovsky Lane, building 7, lies a gastronomic story about modern Armenia – Mouflon. This is the first restaurant in Russia by Stepan Tsarukyan, a successful restaurateur from Armenia, whose ambitious projects like "Ginetun," "Hamov Tnak," "Yasamán," and others have been consistently ranked among the top in the republic for over 20 years. In the spring of 2021, he launched "Sыrovarnya" in Yerevan as a business partner of Arkady Novikov, and now he is opening his own restaurant in Moscow. The name of the new establishment is a direct reference to the endangered, horned mammal native to the Armenian Highlands – a symbol of pride, strength, and purity.

The Mouflon menu is an exciting exploration of the culinary tastes of modern Yerevan residents, created by Chef Narek Sargsyan. Following the principle of using only the freshest, premium-quality ingredients, he offers dishes that are prepared daily in home kitchens and enjoyed by city dwellers. These include traditional Armenian flatbreads baked in a tandoor oven, a fermented milk soup called "spas," "tkhzhik" made from lamb offal, dolma with veal, and kebabs. Alternatively, there are dishes brought in from different corners of the world (since, as is well known, a large portion of Armenians live outside their historical homeland), such as burrata with sweet tomatoes, hummus, or a salmon steak with cauliflower puree, all adhering to the principles of smart comfort food.
