The creators of MONDO MATTO, restaurateur Genrikh Karpin of il FORNO Group and chef Alexei Kovalev, the Russian champion in авторская (author's) pizza, have combined the best of everything in their concept: Italian and авторская recipes, Neapolitan pizza, and focaccia. Perhaps only at MONDO MATTO can you find such a variety of focaccia on the menu – a light, crumb-free flatbread from Apulia, both soft and crispy. In Italy, it is cut horizontally into two halves, and fillings are placed between them, ranging from grilled vegetables to a selection of meats. The dough for the focaccia is also made fresh in the restaurant using a starter made from the highest quality ingredients. It is light, flavorful, and crispy. The fillings cater to every taste and preference – for example, focaccia with prosciutto, mozzarella, and Caesar dressing; with mortadella, mozzarella and stracciatella cheeses, confit onions, and blue cheese sauce; with Parma ham, arugula, Parmesan, and tomato sauce; with salmon, Parmesan, and creamy sauce; and with grilled vegetables, among many others. The word "focaccia" comes from the Latin "buccellato" – buccellato was a typical bread that Romans used to take with them. You can also take the filled focaccia from MONDO MATTO with you, but it's hard to resist – the dish is devoured in minutes right there. In Italy, pizza is part of the culture, an embodiment of the expressive Italian temperament, and, as cliché as it may sound, a true national treasure. It's impossible to list all the adjectives that describe it: amazing, mind-blowing, delicious, juicy, appetizing, and even orgasmic. That's the kind of pizza they make at MONDO MATTO – from the classic "Margherita" to the unusual combination of mortadella, blue cheese sauce, and pistachio cream. The dough is thin, with a golden, crispy crust: it's made with a starter and undergoes a long, cold fermentation. This not only affects the taste, but also makes the dough easy to digest, without the feeling of being overly full or heavy.
