Menu: Letters from Italy Each dish at Matilde is a "letter" brought to you by Matilde from her travels along the picturesque coasts of Italy and the fertile vineyards of Piedmont. Inspired by recipes gathered in cozy trattorias and family-run cafes, she shares with you the treasures of flavor she has discovered along the way. Feel like a guest at a Piedmontese feast, starting your evening with antipasti featuring local delicacies: cured meats and cheeses, Kalamata olives marinated in-house with the aromas of basil, rosemary, and garlic. Delicate carpaccio of ribeye with olive tapenade, chicken liver pâté with a Fiery liqueur jelly served on crispy brioche, classic vitello tonnato with gorgonzola and artichokes, and for true gourmands, a Piedmontese-style beef tartare with lemon aioli and pine nuts, or with black truffle, a salad with braised rabbit and artichokes, Genovese soup with lamb, and a fragrant Turin-style fish soup – the essence of the region's cuisine is reflected in Matilde's menu. The handmade pasta section deserves special attention: from delicate tajarin with white truffle to fragrant linguine with braised duck and chestnut, risotto with braised venison, regional cheeses, and chopped hazelnuts, and seafood dishes with foie gras and porcini mushrooms. In the main section, meat dishes take center stage: braised lamb, venison stew, and delicate rabbit liver with Barolo sauce. Also featured are brown scallops with hazelnuts and prosecco, and grilled salmon. Dessert will be a perfect ending to your journey through the flavors of Piedmont: from the classic chocolate dessert Bonet to a fragrant chestnut tartlet and a delicate panna cotta made with slow-cooked milk, lemon parfait, and sponge cake. Our collection includes 150 selections, including 22 wines available by the glass, as well as 3 special selections from our sommelier, which are updated weekly. Piedmont holds a special place on the list, where you will find a worthy selection of Barolo and Barbaresco, as well as traditional regional wines by the glass: Barbera, Gavi, and Asti. We have dedicated a separate section to Nebbiolo to highlight the depth and elegance of this noble grape variety. Starting in the fall, we will offer wine tasting sets featuring indigenous varieties of Piedmont – an opportunity to immerse yourself in the unique character of local wines.
