"Eastern Bazaar" in the heart of Moscow. Upon entering the Maroon restaurant, you are transported to an Eastern bazaar with its unique aesthetics, atmosphere, and philosophy. Right at the entrance, there's an open kitchen with a grill, wood-fired ovens, and a saj oven, where guests can observe the fascinating process of food preparation. The bar area is decorated with woven, veneered panels resembling a giant basket, which embodies the most delicious recipes of Middle Eastern cuisine. The Maroon menu is a tapestry of gastronomic traditions from countries in the East, such as Israel, Morocco, Lebanon, and Syria. The focus is on meze (traditional appetizers, with 17 different varieties offered), as well as shakshuka, roasted vegetables, grilled meats, dishes baked in a tagine, a wide selection of fresh fish and seafood prepared according to traditional recipes, and various flatbreads baked in a wood-fired oven (such as pita, matzah, manakesh, churek, kubaneh, challah, and others). And of course, there are Eastern delicacies that will surprise the Moscow audience with their unusual combinations of ingredients and aromatic spices. The waiters, trained in the nuances of Eastern culture, are always ready to explain to guests how to enjoy these authentic dishes. A glass display case showcases a wide selection of traditional cakes, pastries, and Eastern sweets, such as Turkish delight, handmade halva, and dried fruits.

The head chef is Vladimir Bogozhavets. Previously, he worked at Arkady Novikov's restaurants, including Salon, "5642 Vysota," BOLSHOI, "Aist," and "Chaikovsky," and he also launched the 15/17 Bar & Grill with a similar concept. Vladimir's professional experience includes a stint in Jordan, where he had the honor of cooking for the royal family.

The interior design was created by the team at Krivtsova & Redina. The designers aimed to transport guests to an Eastern fairytale with vaulted ceilings, patterned windows, comfortable sofas with soft cushions, authentic lamps made of mosaic glass, latticed mirrors, and decorative candle holders. The restaurant's restrooms also adhere to the overall concept. The walls are hand-painted by artists, and the patterns are stylized to resemble Moroccan mosaics. The flooring is also made in the same technique, replicating traditional Moroccan ornaments.
