Maerz - Das Restaurant

Modern tastes meet regional flair with harmonious results – both in the food and the aesthetic of the fine dining restaurant of the hotel Rose, run by brothers Benjamin and Christian Maerz. With its beautiful warm wood panelling and clean lines, the interior is at once cosy, trendy and chic. The cuisine, too, draws on regional culinary tradition as well as contemporary trends, in the form of a set menu dubbed "Heimweh/Fernweh". The chef uses first-rate ingredients sourced from the region, refined with spices from all over the globe, cleverly married in dishes such as "sturgeon in nori, unagi eel, peas & morels, ajoblanco". Christian Maerz will be happy to talk you through the wines or alcohol-free options. Tip: Look out for the "Midweek Special", a three-course set menu including aperitif and drinks pairings on Wed and Thu. There is a pleasant lounge terrace on which to enjoy a pre- or after-dinner drink.
