Alain Bianchin is a genuine craftsman who sensitively blends his classical background with a modern outlook and a scattering of Asian-inspired influences. His versatility and delicacy are founded on textbook perfect technique and the kitchen is his playground. He may highlight the subtle harmony of tuna and foie gras with blood oranges and a jus of smoked oil and soy sauce, but he is also capable of executing melt-in-the-mouth, aromatic lamb flanked by Mediterranean sides and a gravy laced in Roscoff onions. The menu aims above all to allow premium ingredients to shout their name. The wine list, in the same vein, is well stocked in Burgundies. The view over the rolling hills of Lasne concludes the portrait of this contemporary eatery, which mixes designer with authentic natural materials.
