Jun is a Japanese restaurant inspired by the "omakase" philosophy. In Japanese culture, "omakase" represents complete trust in the chef and the team, as well as the techniques used and the quality of the ingredients. "We invite guests into our home, where every detail has its own unique story," says Chef Artemy Lopatin. Inspired by classic Japanese cuisine, Artemy honed his skills in Tokyo (Nobu Tokyo) and London (Nobu London) under the guidance of Nobu Matsuhisa, and with the team at Sushi Nakazawa in New York. Artemy has translated his years of experience into Jun, where the focus is on pure flavors and the uniqueness of seasonal ingredients.

Maxim Polkin was involved in creating the sake collection. "Jun is the main kanji character in the world of sake: just rice, water, and koji – a pure, multifaceted flavor." At Jun, sake is served in traditional Japanese glasses made of carved glass in the Edo-kiriko style. The cocktail menu, created by head bartender Maxim Gorelik and bar manager Sergey Struyk, is based on the philosophy of color: "Tokihairo," the color of the feather of a Japanese ibis, with celery root and yuzu, or "Benikaba," red birch, with shiitake distillate and sesame whiskey.

The design, created by the NB-Studio architectural firm, led by Natalia Belonogova, is inspired by the minimalism of traditional "omakase" sushi bars in Tokyo, London, and New York, as well as the philosophy of Japanese service – anticipating the guest's desires. The restaurant, with 50 seats, features light wood, marble, antique Japanese vases and bowls in the Tenmoku style, and linen coasters for the cocktail menu.
