JUAN CANTINA ESPANOLA is a restaurant project by Mikhail Sokolov, Timur Dmitriev, and Alexander Sysyev, located in the courtyard of the Mjasnikov mansion. Two years ago, the same team opened Salone pasta&bar, and in the spring of this year, the Italian bistro Giallo. Despite their obvious talent for creating Italian concepts, this new establishment has different roots. JUAN, as the name suggests, is a Spanish-Latin American gastro-bar, drawing inspiration from the centuries-old traditions of these unique and vibrant cultures.
A key aspect of JUAN's operation is the emphasis on handcrafted techniques. Sauces are prepared in mortars, farm-raised meats are marinated under a stone press, the bread for the tapas is exclusively homemade, and cheeses and vegetables are sourced from local producers. They have even avoided purchasing tableware, opting instead to have it custom-made in local pottery workshops.
The kitchen at JUAN revolves around an authentic Spanish wood-fired oven, where dishes like roasted chicken with corn, octopus, and machete steak with smoked sweet potatoes are prepared.
